The perfect everyday muffin

An easy to make or modify muffin recipe that is perfect for grab n’ go or relaxing with a cup of French press and your favorite novel. You can hold the chocolate chips and swap the vanilla extract for almond, for a different flavor profile to help mix it up. I hope these are enjoyed by all and become a new snack time favorite.

*Preheat oven to 425 ° F * Spray 12 muffin tin with nonstick or line with muffin papers.

3 Large Ripe Bananas (Approx. 1.5 cups mashed)

1/3 cup Coconut Oil

2/3 cup Brown Sugar (or Coconut sugar)

1 tsp Vanilla

2 tblsp Almond Milk

1 Egg

1.5 cups All Purpose Flour

1 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp Salt

1 tsp Cinnamon

1/4 tsp Nutmeg

1 cup Chocolate Chips

With an electric beater mash bananas with sugar until till smooth and slowly begin to add in the coconut oil, egg, vanilla and almond milk.

In a separate mixing bowl sift together, flour, baking powder, baking soda, salt and spices.

Pour dry into wet, adding chocolate chips, and whisk till combined.

Portion into muffin tin and place in oven.

Bake at 425 ° F for 5 minutes and then another 16-18 at 350 ° F.
