My Favourite Focaccia

Ingredient List:

480 grams all-purpose flour

1 1/2 tsp kosher salt

1 tsp active dry yeast

1 2/3 cups warm water (120 F)

1/4 cup olive oil

flaked sea salt & toppings

1 . In a large bowl weigh out 360 grams of flour, the salt and yeast. Stir in warm water until dough is sticky and soft. Cover with plastic wrap and let rest for 2 hours.

2 . Lightly coat 15x10 inch baking pan with cooking spray and drizzle 2 tbsp. olive oil. Stir remaining flour into dough with a fork.

3 . Gently spread dough into baking pan. Spray plastic wrap and place on dough. Let rise until puffy for 1 1/2 to 2 hours.

4 . Preheat oven to 400 F. Poke dough all over with finger tips to get dimpled surface. Add desired toppings, drizzle with remaining olive oil and flaked sea salt. Bake 30 minutes, or until golden. Let cool slightly, serve warm.
